GOOD EATS | APPLE CRANBERRY SUMMER SALAD


I can definitely admit that salads are by no means my first choice food. Even though I love vegetables a salad is not often very appealing to me. With that being said though, if and when I eat a salad I want for it to be more then just basic lettuce, tomatoes, shredded carrots, croutons and ranch dressing, boring! Give me something made up of random ingredients that at first make me think ew no, but then somehow find that all the flavors work really well together -And that is exactly what this salad is.


And these are the few ingredients you need to make it.

Romaine Lettuce
1 Green Apple
Crumbled Feta Cheese
Chopped Walnuts
Dried Cranberries
Brianna's Rich Poppy Seed Peach Dressing

Actually Brianna's Home Style dressing was founded 30 years ago in Austin, TX and since 2006 they've started to manufacture their products in Brenham, TX. Apparently they've won plenty of first place industry awards. Also they're packaging is the best looking one on the shelf so it would be hard to miss it among the rest. It won a Clio for packaging design after all. Pretty sweet little history! I actually only found out this information by googling the name to make sure I wrote it correctly for this post. lol! Just thought I'd share that. Gaining all kinds of knowledge. 

Anyway since I'm not really into measuring food I just chopped and tossed everything together for this recipe. Pretty self explanatory really. I'm your typical amateur and I use my hand as a measuring cup and eyeball everything. Forget about using measuring cups and spoons (they're probably lost in the drawers anyway.) 

This salad is really flippin' delicious! The tartness of the green apple works perfect with the sweetness from the cranberries and the crisp fresh lettuce. I love feta cheese so that's just another reason to love this salad even more. Also the walnuts just add some really good texture and crunch. I regret leaving the bowl out of the fridge and letting the lettuce wilt, because I could really go for a bowl of this right now!
