If I had to remember one thing about the summer of 2014, it would be tomatoes. Of all kinds. I ate so many these past couple of months that I feel pretty confident in saying that I had at least one tomato every single day. After people tell me of all the amazing internships, summer flings, and jobs they had and then ask me what I did this summer, I'll embarassingly reply with saying that I spent my summer eating tons and tons of tomatoes. I have an exciting life. Until recently I was completely unaware of this variety and let me tell you it has been a delicious discovery. Apparently these are the "it" tomatoes, the "cool kids" in town that only stay around for a short while. They show up late summer and leave early fall. Luckily I snagged a few good ones that were left and put together this salad for lunch.
I like to eat mine pretty much the same as everyone else. A drizzle of good olive oil, some fresh basil leaves, salt, pepper, and a couple of slices of crusty baguette, you know the drill. Also small chunks of mozzarella would have sealed the deal but we didn't have any at the time. It was still great though because when food naturally tastes good you don't really need much.
Note: Yes I'm one of those people who still has to spell check tomatoes because to this day I like to be in denial that the word toes is in the word tomatoes. blegh.
